These amazing chocolate cupcakes taste decadently sinful, but you’ll still fit into your sexy nurse costume and feel good about making them!
- 1 cup almond or soy milk
- 1 teaspoon apple cider vinegar
- 3/4 cup granulated sugar (or sweetener of choice)
- 1/3 cup coconut oil
- 1 1/2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Vegan Cream Cheese Frosting
- Halloween sprinkles, toasted coconut, chopped nuts or garnish of choice
Preheat oven to 350 degrees and line a muffin tin with Halloween cupcake papers.
In a small bowl, combine milk of choice and vinegar. Set aside for several minutes to allow milk to sour. After a few minutes, add sugar, oil and vanilla. Use another bowl to combine flour, cocoa, baking soad, baking powder and salt. Combine wet and dry ingredient and stir until just mixed.
Fill muffin tin until each cup is about 3/4 full. Bake cupcakes for 18 t0 20 minutes, or until a toothpick inserted in the middle comes out clean. Allow cupcakes to cool completely.
Frost with Vegan Cream Cheese Frosting and top with sprinkles, coconut, nuts or garnish of your choice.
