Valentine’s Day Recipe: Deep Dark Chocolate Cake

I have tried my hand at several chocolate cake recipes over my course as a food blogger, and this one is by far the best. It is very moist and the perfect indulgence for Valentine’s Day.

Deep Dark Chocolate Cake
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup boiling water

Preheat oven to 350 degrees. Flour two 9″ pans or one 13″ x 9″ pan.

Stir together dry ingredients in a bowl. Add eggs through vanilla and beat on medium with an electric mixer for two minutes. Stir in boiling water. Batter will be very thin.

Bake 30-35 (for round) or 35-40 (for rectangle) minutes or until done. Cool 10 minutes before removing from pan. Cool completely before frosting.

Frosting: Beat 6 tbsp butter. Add 2 2/3 cups powdered sugar and 1/2 cup cocoa powder alternately with 4-6 tbsp of milk. Beat to spreading consistency and stir in a dash of vanilla.
