Transitioning my husband to a vegetarian/vegan diet hasn’t always been easy. Still, with each meal I know that if I include a “gimme” food, they’ll be no complaints. He may not have meat in his spaghetti sauce, but if I serve fresh baked bread with it, he’ll be happy. He may not get too excited about a veggie burger, but if I make butternut squash fries with lots of ketchup, I won’t be sleeping on the couch either.
When it comes to Mexican food, the “gimme” food that keeps us all satisfied and lets us feel like we’re indulging, when really we are just adding some healthy fats and some creamy, rich flavor, is guacamole. Lucky for me, I have a very fast, very delicious recipe that we all love.
Super Quick Guacamole
Serves 1-2
- 1 avocado, pitted and mashed
- 1/4 -1/2 t. salt
- 1/4 t. cumin
- 1/4 t. chili powder
- 1 -2 drops liquid stevia (optional)
- 1 t. lime juice
- 2 T. chopped cilantro
- 2 T. pico de gallo (found in the refrigerated section of the grocery store) or quality salsa
