St. Patrick’s Day Recipe: Green Jell-O Salad

green-jello-1When going through the recipes I was making for my food blog, there were few less appealing to me than the one for Green Jell-O Salad. I’m not a fan of Jell-O in general, and then when you mix things like pineapple juice and mayonnaise in it, it doesn’t sound like it is going to be more appealing.

I couldn’t have been more wrong though. Green Jell-O Salad may sound questionable, and it may look crazy, but it is delicious. It’s tart and tangy and fluffy and fun. And being that it is quite green, it is clearly perfect for St. Patrick’s Day.

Green Jell-O Salad

2 cups pineapple juice
1 large box lime Jell-O
1 large box lemon Jell-O
1 cup chopped walnuts
1 cup cottage cheese
1 cup mayonnaise
2 cups crushed pineapple
2 very cold cups evaporated milk

Chill large bowl and beaters. Put evaporated milk in a large bowl in the freezer for about 30 minutes to chill.

Heat pineapple juice and dissolve jello.

Combine and mix nuts, cottage cheese, mayo and pineapple. Mix juice/jello mix and cottage cheese mixture.

Beat evaporated milk with chilled beaters until stiff and milk peaks. Fold other ingredients in.

Chill overnight in refrigerator, or a couple of hours until firm.

  2. This salad does sound quite interesting – although I make something similar called watergate salad and I love it. The best part is that is doesn’t have mayo. :)
