
Among the list of foods that I was sure I’d miss when I became vegan, French toast was near the top. By it’s very nature, French toast is inherently un-vegan in nearly the same way a hamburger would be. After all, it’s bread soaked in egg (dairy) and cream (dairy). Yet it’s also the perfect breakfast choice when fighting that ancient internal breakfast battle of pancakes versus waffles.
If you are like me, and have shunned animal products from your diet, or if you just are one of those people that avoids the eggy parts of your French toast because the idea of syrup on eggs disgusts you, this recipe is for you. For the healthiest alternative use whole wheat bread, but for the truly decadent, pick up a thick sliced rustic loaf, and don’t forget the real maple syrup.
Vegan French Toast
- 4-6 slices of bread
- 1/3 c. nondairy milk (vanilla or plain)
- 1/3 c. nondairy creamer (original or flavored variety)
- 2T. whole wheat pastry flour
- 1 T. nutritional yeast
- 1/2 t. cinnamon
Combine all ingredients (except bread) in a shallow dish. Whisk well to get rid of any lumps. Dip bread on each side and carefully place in a preheated skillet sprayed with cooking spray, cooking for several minutes on each side. Serve it up with Earth Balance vegan margarine and real maple syrup.
